So many major milestones are expected to be met during these few years:
-Achieve a diploma, of sorts
-Continue education, if you choose
-Obtain a career
-Acquire a soul mate
-Procure a house
-Have mass quantities of babies
Not everyone meets all of these standards during this time frame, or even during their lifetime. Some by choice, some not.
So what do I do instead of meeting all of these expectations? I cook. Eat. Watch trashy TV. Drink wine.
Earlier this week, I went to the farmer’s market and made a few purchases. I spent $8 on three of the biggest zucchini I've ever seen, six of the biggest summer squash I've ever seen, a few potatoes and a head of garlic. One of the vendors that I made a purchase from gives out free popcorn if you spend over $3, but I ate it on the drive home - it didn't even make it in the house! This leaves me with $12 until Monday, on my financial diet.
Seeing as I had several pounds of zucchini, I found it fitting to whip up a zucchini, potato and feta dish, with zucchini bread for dessert!
½ Very Large Zucchini, Sliced {Approximately 2-3 Medium}
2 Large Potatoes, Diced
1 Small Onion, Chopped
1/3 Cup of Breadcrumbs {or Crackers}, Homemade or Store Bought
1/3 Cup of Feta
1 tsp Italian Seasoning {Omit if Using Seasoned Breadcrumbs}
Chop onion into small pieces. Saute until transparent.
Dice potatoes into bite-sized pieces. Cook with onions or microwave for about 3 ½ minutes or until soft. Add potato and onion mixed to the bottom of an oven safe pan.
Mix the breadcrumbs with about 1 tsp of Italian Seasoning {or your favorite blend of herbs}. Set aside.
Slice zucchini into large coins or long strips {I sliced into coins}. Add half of the zucchini to the top of the potato and onion mix. Sprinkle half of the breadcrumb mixture on top of the zucchini. Continue adding the remainder of the zucchini, spiraling so it cooks evenly. Sprinkle with the last of the breadcrumbs and top with feta cheese.
